One of the definitions of Heliotrope is any plant that turns toward the sun. Sunflowers lose their heliotropism when the head forms and the stem becomes more rigid.

Who knew! I even googled heliotrope and failed to look beyond the purple flowers. Thanks for the new bit of information.
