The butcher was happy to pose and even suggested the piece of meat himself lol

Good shot, but his face seems a little soft...and with a butcher...SHARPNESS IS KEY! (get it?)

Well captured. May have increased the brightness and color levels to give a little more impact.

Very cool subjects, unfortunately this isn't the best composition. Next time, ask him if he wouldn't mind you hanging around him while he worked and take as many pictures as you can. You're bound to end up with a nice crisp, classic, and captivating portrait.
