Ok so the end product was very tasty but not very attractive. The picture of the broccoli (fresh from our garden) was much more appetizing so here it is. :)
Mark's Rough and Ready Cream of Broccoli Soup
Take a couple of onions, a few leaks and the broccoli stalks. Chop up and sweat off gently in a pan.
Add a couple of cloves or garlic (crushed) and fry for a few minutes.
Add a few large potatoes (pealed and diced) and around 1.5 pints of chicken stock. Add a good amount of mixed herbs and season well.
Cook until the potatoes are soft then add the broccoli florets from your head of broccoli (1 large head or a couple of small ones). Simmer for 5 minutes.
Pour the whole lot into a blender and blitz to a smooth consistency.
Pour it back into the pan and add about half a pint of cream. Stir well, season, and serve with nice fresh bread.
