Ingrediants:
250g of Basmati Indian Rice or equivalent
300ml of Coconut Milk
300ml Water
Handful of Pettie Pois (Pea's)
2 Loin Pork Fillets
1 Tbl Spoon Extra Virgin Olive Oil
1 Tbl Spoon Worcester Sauce
2 Tbl Spoons Soy Sauce
Handful of Fresh Pstachio Nuts
3 Tbl Spoons Hot Peri Peri Sauce
Juice & Rind of 1/2 Lemon
1 Jalepino Pepper
1/2 Greeen Bell Pepper
Salt & Pepper to taste
For the Rice:
Rinse the rice in a collender first to get rid of as much starch as possbible, add the peas, cocunut milk and water and bring to the boil. Once boilling turn the heat down to a slow simmer and keep stirring once the liquid starts to evaporate / soak into the rice. Approx 12 -14 minutes after the initial boil the rice should be ready. Fork through before servering. ( This can also be served cold, your preferance )
For the Pork:
Get the Loin Pork Fillets and add the Worcester Sauce, Soy sauce, lemon rind and Peri Peri Sauce rubbing into the pork. Finely chop the Jalepino Pepper and rub this into the Pork also ( best to wear rubber gloves ;0) )Add Salt & Pepper to taste. Leave the meat to stand for 5 minutes. For best results use a griddle, heat the griddle so that it is very hot and add the Extra Virgin Olive Oil, once the griddle is coated in oil and sizzling away add the Loin Pork Fillets. Cook evenly on both sides for approximately 4 minutes ( depending on the thickness ). Chop the green bell pepper thinly.
To serve:
Add the rice, pork loin and bell peppers to the plate, drizzle a little of the lemon juice over the pork and garnish with chives and ground pstachio nuts.
Pour yourself a nice glass of Chardonay for all your hard work and tuck in !
Thanks for the great comments on this shot, most were helpful and im sure your mouths are all watering but in reply to the rice being not very white and is slightly yellow, this is due to using coconut milk, it discolours the rice and this is teh end result of my best yet ;0)
Looking forward to another food challenge as its more my fortae - I think I got extra marks as the food looked quite desireable rather than the actual photograph itslef...
This looks like a delicious dish and I'm sure my husband will be happy for a new idea for the pork. As for the shot, the light is coming off a bit yellowish on my screen. I like the composition of the shot, though all the green all over the meat is a bit distracting. The cropping is good, cutting off the plate actually works in this shot but the plate pattern around the edges clashes a bit with the food. An 8 from me. :)
Oh my!!! This is my kinda eating!!! I always like ethnic foods, and this one is nicely presented. I can't tell what the little yellowish things are on the pork. Is it corn? Woulda been better without them. Also I don't think you need the parsley. There is enough green already with the chives, peas and peppers. Red peppers would have been even better.
A very nice presentation! One of my top picks for the challenge. I think the colors could have been tweaked just a *little* better (I think that it bothers me that the rice isn't very white), but still a classy, appetizing shot! - 8
Getting hungry.. The presentation is fantastic, food looks to be cooked to perfection. I would've liked the focus to be deeper so the rice and pork were all in equal focus. Also the light seems a bit low, there's a slight yellow tinge, though that could be a symptom of the focus. It all looks fresh with that greenery on it. I like it! 7
mmm, Looks good enough to eat! OH, that's the point isn't it? Not sure if it's my monitor, but the rice is a bit fuzzy, would have like the entire entree sharp. Also would have cleaned the plate before garnishing, which is just a bit excessive.
Otherwise very nice composition.
Hand me a knife and fork. A definite cookbook photo. Looks delicious. All the green veggies really help to add interest and color to the shot. I like the colorful plate you used.
