Generally the idea is that you point your speedlight flashes (or desk lamps, or whatever light you have available) at the sides of the tent and the light bounces around inside the tent, lighting the object evenly. I would question its usefulness for food photography though, because the light required for food shots is usually quite directional.
When I setup my food shots I normally set up on a table with flashes and reflectors. If I had an unlimited budget I would invest next in a gridded softbox.
