I haven't read the entire thread, so excuse me if I'm repeating things already said, but I think all the wonderful little things that are better in the D300 isn't really going to make much of a difference in the photo's you'll get. In some genres the features would probably play a larger role than in others, but I still can't see how it should be enough to justify the larger price. On the other hand, the build quality is something worth paying more for. The D300s is a pro body. It's sturdy, a bit larger and the weather sealing is better. I have a D90, and it for me it feels a bit like a toy next to a D300. So when I upgrade one day, I'd make the jump to full frame, in order to get the pro body, but also the better image quality. Just my thoughts.

The OP pointed out the "ADR" which I'm assuming is the auto HDR combining mode. To me, this is rather pointless... useful if you aren't doing HDR normally but if you do HDR you probably want more control anyway.
The D90 is noticeably smaller, which may or may not be a selling point. I somewhat wish I had one of each. I prefer the D300 but would like a D90 for taking backpacking and summiting. The main differences are going to be in the controls in general. The D300s is not aimed so much at the average consumer, and the controls are aimed more at somebody who needs to change things on the fly without delving into menus. There also aren't things like scene modes.
I use the max fps on my D300/D300 with grip often, most often the reason is because I want to take an on the fly HDR. With that fps, I can pull off handheld HDR shots decently, and when I'm backpacking, I don't want to bring any more weight than I need to (I only bring my gorillapod which doesn't lend itself well to compositions off the ground in treeless areas). I also use the fps for making animated GIF's.
Regarding the D90/T1i question, one thing that pops up in my mind is the lack of a Nikon CLS equivalent (ability to command flash built into body). The 7D does have this though. Some hate CLS anyway, so might be a moot point.
