Is it ok to adjust the Hue/Saturation? If so, how much can you adjust?

yes, hue/saturation is allowed according to the rules.
How much...well..that's another story. I never really used it before, I always rely on curves and levels to make my color adjustments. I'm sure someone who knows more about color correction could tell you more about it but for me, I adjust to my eye. I'd certainly like to hear how others use this tool as well though. How about it guys?

I use it quite frequently. Whenever you remove colour cast from photos they tend to become desaturated and flat/dull looking. In order to bring the photo "back to life" you need to adjust the hue/saturation.

There's a great book called Photoshop 6 Artistry which goes into great detail about colour correction as it's related to photographers. I highly recommend it for anyone wanting to learn how to colour correct the proper way. Not recommended for beginner photoshop users, though.

Yes, like brumos I use it after Levels/Curves. I'd rather use those to set basic contrast and color response, then use a little of the saturation in Hue/Saturation to put some life back in the shot. the Hue part is sometimes useful if you need to shift total hue symetrically.

Yes you can adjust Saturation. It is not against the rules as long as you are applying it to the entire image and not to just one selection. You can go as far as you want with Saturation but you will probably get slammed for it if it isn't done for a reason. My entry, Frustration was high saturation and most people liked it but there were a few that didn't like that it was highly saturated, even though it was done for a reason. As for Hue, I'm gonna guess that the same message applies. Turn a person green using Hue and you'll probably get slammed unless you have a darned good reason for it.
