How to get the Pentax K7 (or K20D, I presume they're similar) to ALWAYS shoot in RAW mode?

In the Record menu. Press menu button, go to Rec. Mode 1, scroll down to file format, choose RAW or RAW+ (if you want RAW + jpeg)

p.188 of your manual.
