You also have WAY more options as far as final appearance if you do the conversion in post processing; you can basically emulate any sort of filter yo might use when doing B/W with film, like a yellow filter, a red filter, whatever, and these all change the relationships of tones within the image. The difference can be startling, and it's fun to experiment with.
