I'm closely involved with book publishing (I've been co-illustrator of a no.1 bestseller in the US – a children's book called Santa Claus) and can tell you, from discussions I've had with marketing departments about other titles, that your book would have to be something very special/unique to be taken on by a standard publisher. If it is niche work then you may have a better chance, but otherwise your best bet is probably something like Blurb, where you can design, produce and market your own books. Photography is a crowded market so you'd have to go in with a very different approach – and probably a mass-market one too – to gain any interest. For the most part it's all about money I'm afraid.
The blurb route is a good one and quite affordable. I've produced a book with them and I'm happy with the results, but only for a mass-market audience. For premium quality you may have to go to Asuka or something similar, but I've had no experience with them.
