We've had a few really sunny days lately and it's ruining my shots! If anyone can help me and give me some pointers on how to remedy this I would really appreciate it.
You're shooting directly into the light; that's pure backlighting with specular reflections on the water. It's actually a pretty accurate rendition of what you were looking at, I suspect. A polarizer will be of little help here. It might tone down the specular reflections a little, but not a whole lot.
Thank you for your replies! After I thought about it for awhile a polarizing filter may help a little bit. I remembered that I was wearing my sunglasses while taking these shots! (DUH!) Sometimes I need that kick in the pants to remember what I did wrong.

One option is HDR processing, but that's a lot of work and to do it right, you have to take at least three bracketed shots of the same subject. This won't cure the problem, but may help it.
Another is to either shoot manually or set the EV to +1 or +2, or bracket your shots and pick the best one.
