Does anyone know -- can more than one colour be selected from the drop-down list when you use "Select --> Color Range"?
And, what does "Out of gamut" mean?
I don't think so because you either have to choose from the drop-down or use the color picker tool and you can't choose 2 colors at once with the tool.

you just need to pick the right eye dropper. the one on the left allows you to choose only one sample. The one in the middle with the plus sign allows you to add colors to your selection. then the one on the right with the minus sign allows you to delete colors from your selection
Or you can, select first color..save selection then control J, select second color...save selection and then control J. Then hold shift down to highlight both layers and convert to smart object, then just load selection and both colors will be selected.
The Out of gamut option allows you to select the colors that won't print correctly because those colors are outside the range of the color space you're using. This would be helpful if you wanted to tweak those colors so that they fall within the proper range.
