get the snow to look white without blowing out the whole shot? I either get dull grey snow and underexposed everything, or no detail to the snow and overexposed everything...
The +1 on the exposure compensation should do the trick in most cases.
Your camera can not properly meter a snowy scene. White reflects much more light than grey or black. Your camera reads this extra reflected light and underexposes because of it.
