There is a difference indeed, but it is so little and so irrelevant when it comes to digital cameras, that even the minutest editing in photoshop will counter / emulate the effect. Besides, with the type of lenses the average digital SLR consumer uses, it doesn't make any difference.
That said, if you have a choice, go for the UV. If you don't have a choice, chose either: as long as your lens is protected, you're fine.
