I understood that generally for high volume shooters like wedding shooters, Picture styles are usually used to try to get the best results straight out of camera.
I am watching this one too... I currently shoot standard, which I believe has pretty much all of the settings at 0...
I have nothing real to contribute, but I am watching this one to see what people have to say... I'm sure Prof_fate will be around soon...

I do shoot completly manual, and i do a good job of it, but if i want my skies bluer, and my flowers more vibrant i need picture styles to help me get that,
and i dont shoot weddings in raw because i shoot for a company that doesnt accept raw images. i can only shoot jpeg,
IMO, Canon has not done a great job with the currently available Picture Styles. I stick with Faithful or Neutral, but then again I shoot RAW exclusively and convert in ACR, so the only thing it affects is the histogram and the LCD preview.
When shooting JPEG, there seems to be too much saturation, especially reds, on the default style. I wasn't that impressed with the others either, with the exception of the two mentioned above. If you *must* shoot in JPEG, you're better off, IMO, with a more conservative style. It may need to be tweaked in post, but that can be batched, and it's better to be boosting saturation & contrast a little inpost than facing an irrecoverably blown channel due to oversaturated primary colors.
How you successfully get WB right shooting JPG at weddings? I am finding it impossible unless 1) i'm outside or 2) flash is hte primary light source - and that ain't been the case the last 2 weddings...
Anyway - I have th eadded isue of trying to match 20D pics with 30D picture style pics - so shooting RAW is the only way to truly get them to match (set the 20D files to be processes as the same pic style as the 30D).
The different styles are there to be used like different film - you're shooting landscapes, want velvia? used the landscape style. Portrait style is abit less sharp so it's more flattering to the skin.
Canon's have a tendency to get the skins tones too red. Even in portrait and more so in standard. For most shooting i like standard - it's set to be sharper by default.
Faithful and neutral seem to have the best color reproduction. I find neutral to be way to flat and needs lots of PP work. fine if ou shoot 10 pics, but not good for 700 wedding shots.
I am now trying Faithful with the sharpness cranked up a bit to 3 (from a default of 0). Seems to give me what i want.
i just shoot alot at weddings, i do my best not to underexpose using a high iso, because then its gets messy brighting it up, i use my wide angle and a 2.8, after my wedding this last weekend, i want to get a 15mm fisheye, the photog showed me some pics and they were amazing, to get a better white balacne, i tend to under expose and up my flash 1/2 to 1 and that really helps, and make it not look so yellow from the lights inside, sometimes its too harshon the faces,,,

I just can't stand wedding photogs that puch albums where th eWB is off, far off. I've seen sample albums (supposedly their best work, right?) where the cake or even the wedding dress is 3 different colors in 3 images on the same page.
I guess I'll have to point that out to my prospectve clients from now on - not sure how to put that on my website "The color you want is the color I give" just lacks punch, ya know?
