I would like to make a challenge to all photographers here who have submitted a photo to a challenge where you have desaturated all but one color in your photo...

Good question! I wanted an old "Ice Cream Soda Shop" feel to the photo, and thought that B/W with high contrast would work best for that. But the licorice had to be red:
The manhole had a distracting blue colour cast that I wanted to get rid of, and it was most effective to desaturate it. I think it looked fairly natural and improved the sharp, cold look to it, and enhanced the yellow.
