There are many ways to do this. It looks like what boyte did was "paint" the color back onto that leaf. What I mean is you can desaturate the whole image, then use the history brush on the area you want to "undo." If you look closely at the photo you'll notice some color outside the edge of the leaf. You can also copy the original to a new layer, desaturate that layer, then erase the part you want the original to show through. You can do what I just described but use a layer mask instead of erasing. Anyways, my point is there are lots of ways of achieving this.
