I don't think it is possible to take a bad picture in Hawaii! I was on Maui and Kauai this summer and got some wonderful pictures.
On Oahu, you need to get the obligatory pictures of Pearl Harbor, Diamond Head, Waikiki, etc., but also look for those opportunities to get great shots of the coasts. On the north shore in winter, there are some massive waves and when they crash on the cliffs it is amazing.
There aren't any private beaches in Hawaii so drive around and find the small beaches that will give you more room to shoot "untamed" shots. Drive up into the inland for some great pics of the vegetation. And to get exposure to Pacific Island life, be sure to check out the Polynesian Culture Center. They have beautiful people in authentic dress from Hawaii, Fiji, Samoa, and other locations. In fact, I think this is the location where they shot the wedding scene of Elvis's "Blue Hawaii."

OK, I am assuming you are renting a car while there for all of my suggestions.
Just drive around the island. Seriously. There's lots to see and you can stop anytime you want if you see something interesting. If you don't stop, it takes about 2-3 hours. Places I'd suggest to stop while driving around include Diamond Head (you can hike there, it's easy), Hanauma Bay for snorkeling, the blow hole, area near Sea Life Park so you can see Rabbit Island, you can then stop for lunch in Kaneohe at one of my favorite places called Tasty's Korean BBQ, then continue north and you will see Chinaman's Hat, Kim Taylor Reece's gallery //www.kimtaylorreece.com/, lots of places to pull over and get shots of the big blue expanse, then Polynesian Cultural Center and BYU-Hawaii and quite touristy //www.polynesia.com/, then the famous North Shore beaches such as Sunset, then you'll hit Haleiwa and you NEED to stop at Matsumoto's Shave Ice //www.matsumotoshaveice.com/, then you'll drive towards the center of the island with the Dole Plantation //www.dole-plantation.com/ and then eventually back into Honolulu. There are many MANY more places to visit and I only touched on a few ideas. Feel free to PM me for more details.

That's the only place I've been, for four days ten years ago ... but lava spilling into the ocean sounds like a photo-op to me.
If you fly in the daytime, take pictures from the plane too.
I believe the lava flows are more active now, but when I was there it would have taken a helicopter tour to see any lava spilling into the ocean. We walked along the lava fields for 3 hours in both directions, only to get our shoes a little hot and our nerves frayed from fresh lava crushing underneath us.
Everything in Hawaii is local. Where are you staying and how far are you willing to go, and are you solo or with the family?
On Oahu the northshore has great waves and therefore great surfer action shots if you can just go and sit for hours, if you have a bunch of kids between the ages of 3 to 13 then you need to go to the polynesian culteral center a few miles up the road.
If you are serious about underwater work ther are some great national parks ( aquatic type) on Oahu but even if all you do is swim the breakwater at Wakiki getting a cheap underwater camera is worth it.
Guess what... Ill be in Hawaii at the same time as you are running around taking snaps, there are many Islands to Hawaii I will be on Maui and Hawaii so if you are there and see a skinny old bald man with a D70 leaning over the rails to get a better shot of the setting sun over the night sea try hard NOT to kick me in the BUTT!..
Hawaii has so many things to photograph you wont have time to think so just enjoy it.. If you going to honalulu the stop off at the Mandarin hotel they have a Dolphin pool and an amazing lobby they will let you go walking around too and while I stayed there they had about 20 weddings going on too I didnt have time toi think really.. enjoy it.
I just came back from Hawaii (but didn't want to). Visited Kaua'i and Lana'i. Kaua'i was great with wonderful geography and chances for good photography all over the place; Lana'i? well... it's nice 'n little and tiny Lanai City is a treat because the people are so nice. And there are some great dirt tracks they call roads.
I was just on Maui and the Big Island over Thanksgiving. Awesome place to be...a heck of a lot better then Minnesota.
Anyway, if you're going to Oahu, go to Pali Lookout and the North Shore. Great waves there. Those are really the only things I remember when I was on Oahu ten years ago. I was just at the Airport this time.
