The riverwalk is a good place to photograph at night. I don't know how late it is open but the Market Place would also be a good place. It's been a long time since I've been there so there might be some newer place that I don't know about.
We were in San Antonio in March, and we spent a lot of the time in the evenings along the Riverwalk. Another place to check out, especially at night, is the view from the Tower of the Americas. It's breathtaking. There are several old missions around the area, which might be nice to photograph near sunset. Here is a link to some of the main attractions there. Have fun! :o)
The botanical gardens are fabulous! but they close at 5.
Riverwalk as mentioned has lot's to see. of course the Alamo, downtown and a very large sculpture near there.

Wow... the Natural Bridge Wildlife Ranch sounds fantastic. Now I wish I could spend an extra day just so I could visit the ranch!
The wildlife ranch is cool, but needs a bit of repair. Last time we were there it looked a bit beaten by the heat.
As to suggestions on where to go, I suppose it mostly depends on what you might be looking for. The missions are great to visit and shoot. The botanical gardens are also decent for flowers 'n stuff. The tower, the Zoo, etc. are all good. One additional place I didn't hear mentioned is the Japanese Sunken Gardens. Its a cool place with a different take on stuff.

Erk! Scratch the Sunken Gardens! There's an article in the paper today that says that it is in major need of repair and is soon to have a major facelift. *snicker* Shows how long its been since I was there last ;)
