So, I have this folder that contains my mother-in-laws old website (new one being built) and she needs me to find and copy into a word doc her policies, shipping and about us pages, anyone know how I can access these and do that?

ping me the details and I can help you. as long as you have wordpress config still present and database still available the content can be pulled out.
