Generally, the organizer will plan for everyone to meet at a photogenic location. I've organized or participated in meetups everywhere from downtown Dallas to an automotive junkyard.
Usually the group wanders a bit, everyone looking for what interests them, agreeing to regroup later on at a specified place and time. It's always fun to see how different people can photograph the exact same subject at the same time and often come away with totally different photos.
When I arranged a North Texas DPC meetup a few years back, we met for breakfast at a Denny's, which gave an opportunity to get to know anyone we had not met in person before. Then we spent a few hours at an airshow (which I almost had to be dragged away from) and got lunch before heading to DeRidder antiques, a place chock full of interesting and unusual objects. I combined it with the monthly meetup for the local Flickr meetup group, so not everyone in the photos is a DPC member.
The second day, we went to the Modern Art Museum and then the Fort Worth Stockyards. (This was a two day meetup)
