I have horse backed through red rock and hiked valley of fire. Valley of Fire is on my short list to return to, Red Rocks is not. If you go to Valley of Fire, stop at the Rez store where you make a right. It should still be the same as it ever was. We bought fireworks inside and shot them off outside in the parking lot (A good time was had by all). If you have the time, leave Valley of Fire via 169. There are a few places you can drive down to Lake Mead/Virgin River and there are some spectacular views. You can follow that back around to Vegas, though it is the longer way and you come in from the east.
