I'm interested in finding a site that offers to create a blog where I can use sub menus or putting my posts into categories...I hate the standard ones where they sort your posts only by date. Anyone knows this kind of site?

Wordpress is very customisable. I used to use their software hosted on my own website, but they now offer blogs through their website too. You can tailor just about every single aspect of how you want to present the blog.
Blogspot appears to let you do this.
Strobist uses the dropdown menus on the side for categorizing, but here's another example //themountain-life.blogspot.com/ (not my blog, just a sample for a user from another forum I regular).
