I think she's partly operating on the principal of impressing the client with massive gear in order to command a more massive paycheck.

Yes you are right, however, with limited time with the model you don't get 100-200 snaps out of one camera to get the right one. This setup gets you that in a fraction of the time with the model. And yes as Sloppy Slippy said she can demand the huge price tag with that setup.
