I'm sure others have thought of this before, but Thanksgiving and Christmas are the only times when most major stores are closed so it would be the perfect time to get a sweet picture of stores and an entirely empty parking lot. It would be awesome in your portfolio, because it'd look like the store hired you to take an exterior shot, and they shut the parking lot for you. :)
