Simplified version: you have a blue dragonfly on a green leaf, so you make a hue/saturation adjustment layer and desaturate every color but blue and cyan. Or for whatever colors you have, choose the appropriate ones to desaturate to make it stand out. In general, hue/saturation is the best tool for this job, not selective color, though there are exceptions.
