I tend toward matte finish because as people have probably mentioned before, I'm not fond of the glare that gloss can cause when mounted. I just recently did up some photos for a school photography competition and I experimented with a bunch of different types of paper and settled on the matte. I suppose it's all a matter of taste and what you're doing with the photos you print.
I am going to say neither, I go for the canvas print papers. I think all papers have their place, just like all the papers had their place in the dark room but in general for what I shoot canvas print paper fits best
I use glossy and then spray it with U/V resistant clear acrylic coating, which adds to the print life, makes it more durable, hides fingerprints and scuffs, and greatly reduces glare.
I have a problem with the matte and luster papers available for my printer as the tend to leave the whites flat looking. There is also much less color shift with the glossy.

As for printers and paper, that's a whole new ballgame to me. Sounds expensive. I'm using DPCPrints for now. Not sure what type of paper they use...I know the prints I've ordered in the past were satisfactory as to quality.
John makes a good point about the dry mounting and seeing a framer. I know of one up the road that's supposed to be decent...think I'll stop by there this afternoon.
